Well there are a lot of factors here. Lets use basketball as an example. Curry is making north of 40M per year. But basket ball runs a soft cap system with a luxury tax up to a hard cap, 109M and 132M respectively. Both of which are significantly higher than the NHL's current cap so there is a lot more money to hand out.
Sport popularity factors into this too, the higher income the sport makes the more it can afford to pay out its players.
Team roster sizes also factor in, basketball has a roster size of 15, bs 20-23 for NHL
And lastly the significance of superstars vs other players roles. In a game like basketball superstars are much more relevant then in hockey. In hockey positions like Goalie and defense are important enough that their pays add up and reduce the amount of cap space you can spend on a superstar.
