I understand your logic, but disregarding the opinions of people who have followed their prospects and understand a teams area of weakness might be a difficult strategy. The Kings trading away their 2020 2nd overall pick (Byfield), 2019 5th overall pick (Turcotte), 2017 11th overall (Vilardi), 1st round pick for 2021 (likely top 10), Kempe is not a fair value for Eichel, if for no other reason top 3 overall prospects are almost universally untouchable especially within their draft year. I really can't remember the last time it happened.
Second, yes, the Kings are set at center and Eichel does not provide an advantage to a rebuilding team, the Kings have a slow methodic plan where each player will slowly move up from the AHL (they hired Turcotte's old US NDTP coach this year specifically for this). This can be shown by how they did not rush Vilardi after his injury and limited his play last season and they reluctantly let him take second center after he just outplayed everyone else. Once the Kings are ready to compete and have their future core in place absolutely sell whoever they can to get better.
Third, the Sabres absolutely should get a haul but as I said above, why do the Kings want to even do this. They and a handful of other teams are an intriguing option because they can take on $10M without sending expensive contracts the other way. Detroit or the Rangers might work, but I truly believe they will work out their differences and he stays in Buffalo.
