What’s the thinking behind these Kapanen deals? Are pens trying to unload his salary (or next contract)?

Upon first glance, this does not seem like enough.

1. Last year, the price for Sam Bennett was a 2nd and a prospect. The price for Mattias Janmark was a 2nd and a 3rd. This makes me think that the price for both Radulov AND Gurianov (including retained salary) may be more than two supporting players and a 2nd round pick. Jason Zucker's value is lower than it has ever been. Kapanen has flashes of greatness, but he is a supporting piece. If I was Dallas, I wouldn't trade both of them together, unless I received a 1st round pick.

2. I also can't imagine that Dallas are selling two forwards when they are tied in points for the 2nd wildcard spot. Unless the next two weeks are disastrous, I don't see them selling in such a significant way.

Its basically Kapanen for Gurianov and Zucker + 2nd for Radulov with retention

I'm doubting Dallas wants Zuckers cap next season. Plus has mentioned above, Dallas probably won't be sellers.
