There are loads of stats that can be used in conjunction with each other in order to get a feel for how good a player is.
Don't look at takeaways or giveaways in isolation, look at them together and adjust for icetime.
Look at how many of a player's assists are primary ones. This is especially useful for defenders who often get assists without actually assisting very much.
Compare +/- with how the rest of the team did.
Make sure that any scoring stat is adjusted for icetime including the ones on PP.
No player can be understood by looking at stats alone but there are ways of getting useful information out of it.
If a defender is showing a negative +/- when the team is showing a positive and if he also is prone to making more giveaways than takeaways and any points he gets are secondary assists and the majority of them comes on PP - Then that defender may not be the best player to target for your team...
