That second line will score a lot of goals but the defensive ability I feel like concerns me a little bit

That it would. I'd try to keep them out there with Josi-Ellis pairing to try and mitigate that. Could also mix the top 6 lines up some by putting Forsberg with Duchene and Athanasiou and Hoffman with Joey and RV. That'd make the 2nd line better defensively while still having a good offensive punch.
