Not sure why. TOR has already spent time and money into Robertson and he has a year left on his deal. They would essentially be starting the same process over again with this 2nd round pick. Likely another 3 years before the draft pick gets a sniff at the NHL.
Robby has least stepped into the NHL, just needs to stay healthy.

NYI POV: For a return like that they would definitely consider moving him if they were sure they can retain Nylander and the rest of their upcoming FA, and protect their RFAs while being able to get an adequate replacement for Sorokin. However, the amount of moves they would need to make to ensure that is a ton and probably won't happen fast enough for them to sign their RFAs and get a replacement. Would be safer to just keep your elite goalie.
TOR POV: Sorokin isn't the best goalie in the world like you said, so trading 4 pieces for him would be crazy, especially one of them being an elite forward, which in most cases have more trade value than elite goalies even though elite goalies are more rare but the position is unpredictable. They certainly do not offer this, not in Real Life or a video game. Only on AGM

Thankfully for Dach NHL GM's are far more patient with development. Giving up on a player who just turned 21 a few months before the end of the season is absurd especially given his size/skill combination. He needs to continue to work on his skating and strength which takes time. Other fanbases are usually the ones labeling players busts long before they should ever earn that title. Look at all the people claiming Laf and Kakko are busts, almost none of them are fans of the Rangers, yet they call them that thinking their team can get the player for a nothing return.

At some point you need a defenseman to play D. If you run Rielly, Letang, Sandin, Liljgren out, yes, you will score. You will also get scored on, as none of them break a cycle or can play 2-on-1's that they would be giving up WAY more of.
Brodie was worth every penny of his contract and then some. His job is not to be on the highlight reel.

Letang may be / have been the better play than Brodie-- but I don't think he's a better D partner for Rielly. Brodie has been very good for TOR, he's just not flashy.
Overall, this defense is worse, especially in their own end. Without a clear #1 goalie, that does not work well.

That’s cool. I get the second option may seem more expensive…But if you are willing to move back one round in this post why wouldn’t you be willing to move back two rounds? The percentages aren’t that much different (of drafting an NHL player) in the late 2nd/late 3rd round.

Cory Schnieder was traded for 9th OA and he had a career .930% and you guys think Gibson, with 3 down years in a row, with an extremely risky contract of 5 x 6.4mil, who has been just around .900% during that time will net you all of that? Keep dreaming
