I'm not sure, but I think they might have to protect Felix Sandstrom from Seattle. He signed his entry-level contract in March and is on loan to his SHL team this year, so that might count as a pro season? I'm not sure, but it's just a thought.

Carter Hart should definitely be exempt because he's turning pro this season and won't have accrued 2 full pro seasons by the time the Seattle draft is supposed to happen in June of 2020.

Hart is exempt and so is Sandstrom. European leagues dont count in that clausule. Player is available to be picked if he plays more than 2 seasons in either AHL or NHL. He might play 5 seasons in europe and then play one season prior to expansion draft in NHL and he would be exempt. Also rookies on ELCs are exempt no matter how many seasons they play. At least thats how I understand it.

Right, they specify professional AHL or NHL season, not just professional seasons.

Players on ELCs aren't automatically protected, no. Most of them will be exempt because they won't have accrued the 2 AHL/NHL seasons, but a player on the 3rd year of his ELC will have to be protected. Ekblad is an example of that for Vegas' draft. Nolan Patrick & Nico Hischier will be an examples of that for the Seattle draft.
